Cooking: Chicken and Biscuits

I haven’t posted about cooking in a while, so I figured I would share my chicken and biscuits recipes.

For the Chicken (adapted from Eating Well):

1 breast per person
Buttermilk or milk
Flour
Panko Bread Crumbs (I bought mine at Whole Foods but you could do this)
Seasoning
Fresh Parmesan

Pre-heat the oven to 450. Cut up the chicken into nugget size pieces. Dredge them in flour and then soak them in some seasoned buttermilk. I tend to use black pepper and cayenne. Put the panko crumbs into a bag. I grate the Parmesan into the back with some more pepper and cayenne. (I really should measure). Place the chicken in the bag and shake enough to make sure all the chicken is covered. Place on a greased cookie sheet. Cook for 20-25 minutes turning once.

For the Biscuits (from How to Cook Everything)

2-5 tablespoons of butter
2 cups flour
1 small teaspoon of salt
4 tablespoons teaspoons of baking powder
3/4 cup of milk

Preheat the oven to 450, which makes it perfect to cook with the chicken. Break apart 2-5 tablespoons of butter and place in food processor. Add 2 cups of flour, 1 teaspoon of salt, and 4 tablespoons of baking powder. Pulse in the food processor or mix up by hand. Add 3/4 cup of milk and pulse again (unless you have a dough blender and blade then use that). Take out, knead a few times, and then create your biscuits. Best part of this is that you can make double batches because the dough freezes well.

I also make some honey butter for the biscuits. Soften the butter and mix two parts butter to one part honey by stirring. Simple, easy, and delicious. I buy my honey at the local farmer’s market.

  1. I tried this recipe and unfortunalty there seems to be a typo on the amount of Baking Powder in this recipe. There was a really strong taste of baking powder in the biscuits when they were finished. I followed the recipe exactly as you stated but I think you meant to say 4 Teaspoons of baking powder instead of 4 Tablespoons!

  2. Made the biscuits tonight to go with baked macaroni. They are delicious! I will try it with chicken another day (we’re out of chicken!)
