Equipment

  • 1 Rice Cooker We use the Cuckoo CR-0351f Electric Heating Rice Cooker

Ingredients
  

  • 1 tbsp Bacon Up You could use bacon grease from previously cooked bacon, but if not this is a great subsititue.
  • 1 lb potatoes Russet, Idaho or Yukon Gold all work well
  • 1 pinch sea salt to your taste
  • 1 cups water I usually do to cover the potatoes.
  • 1 cups chicken stock optional for more flavor use in replace of water

Instructions
 

  • Prep the Potatoes
    Wash and cut the potatoes into small, even-sized pieces. Leave the skins on for a rustic texture or peel them for a smoother bite—whichever you prefer. The prep time for this can be from zero to twenty minutes depnding on what course you take.
  • Assemble in the Rice Cooker
    Place the potatoes in the rice cooker pot. Add the bacon grease and a large pinch of salt. Optional: For more flavor, use chicken stock instead of water. Pour enough liquid to cover potatoes halfway. If you add too much water, it will still be delicous, but youu will be waiting forever!
  • Cook
    Set the rice cooker to its “cook” setting and let it do its thing. Depending on your rice cooker, this should take about 20–30 minutes.
  • Check for Doneness
    When the rice cooker switches to “warm” or shuts off, check the potatoes. They should be fork-tender. If needed, add a splash of water or stock and cook a little longer.
  • Make It Loaded (Optional)
    For a loaded version, mix in shredded cheese while the potatoes are still hot. Add a dollop of sour cream, sprinkle on crumbled bacon, and finish with chopped chives or green onions.
